Plantain and Fish Soup

So I bought a plantain the other day, I normally just fry it and eat with black beans and rice, but I recently discovered Erica's blog My Colombian recipes and thought to myself, I bet she has a good recipe, so I found this one

A very simple and great recipe that I decided to adapt slightly, I wanted to add fish and veggies to make more of a balanced meal out of it, Plantain= carbohydrate, fish= protein and Italian beans= veg!

Ingredients: 1 plantain - I only had one!, 1/2 red onion, 4 cloves garlic, salt and pepper, fish stock and one cube veg stock, cumin, 1 tomato, some frozen Italian beans,tomato paste 1/2 green pepper- now I can send to Jenn of Bread and Butter for the mystery ingredient challenge!, 2 fillets of flounder.

1. saute onions, garlic. green pepper, in olive oil, add cumin powder (I never knew this was used in Columbia, very nice), then add tomato, and stock, about 1 liter and a little tomato paste.
2. Add uncooked pieces of fish, beans and cubed plantain, and simmer for 20 min.
3. remove a little of the soup with quite a bit of the plantain and blend, to thicken the soup.

Simmer for another 10 min and garnish with cilantro, it tastes amazing and is so healthy, will be definitely make it again, thanks Erica for the inspiration.
I love discovering foodie blogs to get inspired, I have just found a Syrian one, so Middle Eastern in the near future.

We are going to DC Thursday we adore eating in Georgetown, then I am going to a conference to be trained in Motivational Interviewing. In order to work with a Pediatrician for an up coming research study. We will be counselling the parents of overweight kids, should be fun.

It's great to keep learning also its not that great a commitment so I still have time with my amazing daughter.
