Easy Vegetable Pilaf

We came back from NYC on Sunday we had no food in the house, just 1/2 onion, curry leaves and some garlic in the fridge. So I got creative googled vegetable pilaf recipes and opted for frozen vegetables, it was fast tasty and healthy.


  • one stick of cinnamon
  • 3 cloves
  • cumin seeds
  • 2 dried red chili's
  • 3 cloves of chopped garlic
  • 1/2 red onion chopped
  • one spoon garam masala powder
  • 3 bay leaves
  • a few curry leaves
  • spoon coriander powder
  • teaspoon of turmeric
  • one cup of basmati rice
  • 2-3 cups of water
  • salt to taste
  • lots of frozen vegetables

  1. heat some canola oil and add all the spices with onions saute for 3 minutes
  2. add vegetables and saute another few minutes
  3. then add the rice and water, bring to a boil, turn down low and simmer for 20 minutes
