Meyer Lemon Madeleines

I just adore Madeleines and have enjoyed making them quite a few times with my mold I got in France last year. Its so much fun to get kitchen gadgets while traveling as every time you use it,  fond memories coming flooding back. I remember the day I got this mold in Nantes it was raining cats and dogs so what to do, enjoy cooking stores and eats loads of galettes and crepes!

 They are easy little cakes to make and can be any flavor, I have made chocolate orange madeleines, chocolate and coconut and plain. I got a lovely Meyer lemon last week so made lemon flavored ones, and wow what a wonderful combination. 

What madeleines will you make?

  • 2 eggs
  • 75g sugar
  • pinch of salt
  • 90g flour (about a cup)
  • 3g of baking soda
  • grated zest of a Meyer lemon
  • 90g melted butter
  • one spoon of runny honey
  • a few drops of vanilla essence 
  1. melt the butter and keep it to one side
  2. whip the eggs with sugar and salt then slowly add the sifted flour and baking powder, lemon and vanilla essence.
  3. Mix until smooth then add the melted butter and honey and leave to chill for 30 minutes or longer
  4. bake for 10 minutes at 350 degrees.

I knew they were good as they only lasted two days, hubby got his share he he 

On the Eurostar this train is old but rocks, in just 3 1/2 hrs you can leave London and reach Paris, a capital in another country. It even goes under the English channel - that still amazes me.

I have been down memory lane this week, so much fun.
