Smoked Salmon Fried Rice

This is a wonderful recipe for fried rice, I adore smoked salmon and it pairs so well with Asian seasonings and adds something special to fried rice. Also it uses ingredients we all have on hand and can be made in no time :-)

  • one cup of rice so about 1 1/2 cooked
  • 1/4 cup frozen peas
  • one small yellow squash chopped
  • one small zucchini chopped
  • 1/2 an onion chopped
  • teaspoon ginger paste
  • 3 cloves of chopped garlic
  • a few mushrooms chopped
  • a small packed of smoked salmon broken up
  • Chinese 5 spice - about a teaspoon
  • 2 eggs to scramble into the mixture
  • a dash of fish sauce
  • one tablespoon of soya sauce or as desired

  1. saute the onion, ginger and garlic in canola oil for 5 minutes
  2. then add the vegetables and spices, after a few minutes scramble the eggs into the mixture
  3. add the fish sauce and salmon stir free until vegetables are cooked then mix in the cooked rice with soya sauce
  4. enjoy :-)
